These delicious cinnamon rolls from the Spruce Eats are easy to make and perfect for kicking off the New Year.
Preheat oven to 375 degrees Fahrenheit. Butter a 9x13-inch baking pan.
In a small bowl, combine 3 cups self-rising flour and 1/4 cup plus 1 1/2 teaspoons shortening until the mixture resembles coarse crumbs. Add 1 cup milk and stir until dry ingredients are moistened. Turn dough out onto a floured surface and knead lightly, 3 to 5 times. Roll dough into a 20x14-inch rectangle. Spread 1/2 cup softened butter evenly on top, leaving a 1/2-inch border.
In a medium bowl, combine 1/2 cup sugar, 1/2 cup firmly packed brown sugar, and 1 tablespoon cinnamon. Sprinkle sugar mixture over butter. Top with 3/4 cup coarsely chopped pecans.
Beginning at the long side, roll dough jelly-roll fashion and press edges and ends together securely. Cut rolls into 1-inch slices and place cut-side down into prepared baking tin. Bake for 20 to 25 minutes.
To make the glaze, combine 1 1/4 cups confectioners’ sugar, 3 tablespoons milk, and 1/4 teaspoon vanilla. Drizzle over warm rolls and enjoy.
